blueberries are not like bananas in our house, they get eaten, and quickly. i eat them by the handfuls and mixed into my greek yogurt or on cereal. blueberry muffins are also a favorite. here's one that i really like.
2 cups white sugar (you can also split it 1 C white and 1 C brown)
1 cup vegetable oil
1 tablespoon vanilla extract
4 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
2 cups sour cream
2 cups blueberries
beat eggs, gradually add sugar. continue beating while slowly pouring in oil.
stir in vanilla.
in a separate bowl, stir together flour, salt and baking soda.
stir dry ingredients into egg mixture alternately with sour cream. Gently fold in blueberries. Scoop batter into prepared muffin cups.
bake in 400 degree oven for 20 minutes.
