every week with my good intentions in tact i buy bananas thinking that this week the kids will eat them. sometimes i am right, but more than often i am not. this leaves me with over-ripe bananas. when this happens i either freeze them or make a favorite recipe of ours.

all you really need is a hardy wooden spoon and you're good to go:
mix together
1 stick butter
1 cup sugar
1/2 teaspoon salt
2 eggs
1 teaspoon vanilla extract

sift together
1 1/2 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder

mix all together and add 3 ripe bananas. smush it all together. at this point add chocolate chips or nuts to your hearts content.
bake in greased tin at 350 for 25 minutes.

yummy.

So, I can't get my kids to stop eating bananas. I think David can even eat a whole one by himself.

I was just about to throw out our bananas when I saw your recipe. My kids enjoyed banana muffins for breakfast this morning. Thanks!
